Description

This pancake is so delicious that you won’t even believe it’s gluten-free, dairy-free, nut-free, and sugar-free. Plus – it’s ready in 7 minutes!

Ingredients

Scale
  • 1 banana
  • 1/4 cup coconut flour
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 Tbsp ground flaxseed (optional)

Instructions

  1. Add a little coconut oil to a small frying pan and heat on medium.
  2. In a small bowl, mash the banana and add all of the ingredients. Stir to combine.
  3. Place in the pan and cook for 3 minutes and then flip and cook another 2 minutes until browned on both sides and cooked through.
  4. Serve warm with your favourite toppings (see below).

Notes

Flour Swap

For more protein, feel free to switch to almond flour or a bean flour – or simply use whatever flour you have on hand.

Egg Free

Replace the egg with a flax egg.

Fluffier Pancakes

Thin out the batter with a little coconut milk (or other milk alternative) and add in a little aluminum-free baking powder.

Toppings

Top it with some berries and pure maple syrup, heat up your favourite nut butter and drizzle it on top with some seeds, or spread some chia jam over top.
