Description

This simple recipe takes just 5 minutes to prep, making it a great “prep day” dish.


Ingredients

Scale
  • 12 eggs
  • 1 red pepper
  • 1–2 cups spinach

Instructions

  1. Preheat your oven to 350F.
  2. Spray an 8×8 oven-safe dish with cold-pressed extra virgin olive oil.
  3. Crack your eggs into the dish, dice your pepper and toss in your spinach.
  4. Whisk together.
  5. Place in the oven and bake.

Notes

Raid the Fridge

  • This recipe is so versatile. Take the opportunity to throw in whatever extra veggies you have on hand in lieu of the vegetables listed.
  • Zucchini, mushrooms, celery, tomatoes, kale, broccoli, yam … it all works!
