Description

This simple recipe takes just 5 minutes to prep, making it a great “prep day” dish.


Ingredients

Scale
  • 12 eggs
  • 1 red pepper
  • 12 cups spinach

Instructions

  1. Preheat your oven to 350F.
  2. Spray an 8×8 oven-safe dish with cold-pressed extra virgin olive oil.
  3. Crack your eggs into the dish, dice your pepper and toss in your spinach.
  4. Whisk together.
  5. Place in the oven and bake.
