Apple Cranberry Stuffing

Description

Bursting with fall flavours like apple and cranberry, this is sure to become a new Thanksgiving favourite in your house.


Ingredients

Scale
  • 4 slices of ezekial bread
  • 1/4 onion, diced
  • 4 stalks celery, diced
  • 2 carrots, diced
  • 1 granny smith apple, diced
  • 1/4 cup fresh parsley, finely chopped
  • 2 Tbsp fresh sage, finely chopped
  • 1 Tbsp fresh thyme
  • pepper, to taste
  • 1 cup frozen cranberries
  • 3/4 cup – 1 cup low-sodium vegetable broth

Instructions

  1. Preheat your oven to 350F.
  2. Cube bread and bake in oven for 5-8 minutes, or until it is slightly dried out.
  3. Meanwhile, sauté your onion, celery, carrots and apple until softened.
  4. In an oven-safe dish, combine bread cubes, sautéed veggies, herbs, pepper, cranberries and broth. Make sure there is just enough broth for the bread to soak up, but not too much to make it go soggy.
  5. Bake for 25 minutes.
