Apple Spice Muffins

Description
Ingredients
- 1 1/2 cups spelt flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 apple, finely chopped
- 1 cup unsweetened apple sauce (see notes)
- 1/4 cup cold-pressed coconut oil
- 1/4 cup pure maple syrup
- 2 eggs
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 apple, finely chopped
- 1/2 cup apple sauce (see notes)
- 1/4 cup cold-pressed coconut oil
- 1/4 cup pure maple syrup
- 4 eggs
Instructions
- Preheat your oven to 350F and spray a muffin tin with coconut oil.
- In a medium bowl, combine dry ingredients.
- In a small bowl, combine wet ingredients (including diced apples).
- Add wet to dry and mix until well combined.
- Divide evenly among muffin tins.
- Bake for 20 minutes (25-30 minutes if gluten-free).
Notes
If you have a Vitamix, seed and remove pit from 3 apples. Place in your vitamin with the juice from half a lemon and a dash of cinnamon. Slowly increase to 10 until pureed (should take no more than 60-90 seconds). Fresh apple sauce in a minute!
Replace coconut oil with apple sauce.
Replace eggs one for one with flax eggs.
