Warm Apple Walnut Salad

Ingredients
Scale
For the salad:
- 1 cup uncooked quinoa
- 2 cups water
- 4 granny smith apples
- 8 cups kale
- 1 cup walnuts
- 1/2 cup unsweetened dried cranberries
For the dressing:
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh cranberries
- 2 Tbsp red wine vinegar
- 1 Tbsp pure maple syrup
Instructions
- In a small pot, place your quinoa and water. Cover with a lid and set on high. Once it comes to a boil turn to a simmer for 20 minutes.
- In a large pot, toast your walnuts on medium heat. Meanwhile, core and dice your apples.
- Add your apples, kale, and cranberries to your walnuts and continue to cook on medium heat. Stirring frequently, until kale begins to wilt and apples soften.
- Combine dressing ingredients in your blender and blend on high until smooth.
- When quinoa is ready, add to your apple mixture and gently mix with dressing.
- Serve warm.
Notes
No Quinoa? No Problem!
Replace your quinoa with whatever protein you have on hand – beans, lentils, chicken, turkey, and even salmon.
