Warm Apple Walnut Salad

Description

Easy to make and loaded with delicious fall flavours – this salad is a must try!

Ingredients

Scale
For the salad:
  • 1 cup uncooked quinoa
  • 2 cups water
  • 4 granny smith apples
  • 8 cups kale
  • 1 cup walnuts
  • 1/2 cup unsweetened dried cranberries
For the dressing:
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh cranberries
  • 2 Tbsp red wine vinegar
  • 1 Tbsp pure maple syrup

Instructions

  1. In a small pot, place your quinoa and water. Cover with a lid and set on high. Once it comes to a boil turn to a simmer for 20 minutes.
  2. In a large pot, toast your walnuts on medium heat. Meanwhile, core and dice your apples.
  3. Add your apples, kale, and cranberries to your walnuts and continue to cook on medium heat. Stirring frequently, until kale begins to wilt and apples soften.
  4. Combine dressing ingredients in your blender and blend on high until smooth.
  5. When quinoa is ready, add to your apple mixture and gently mix with dressing.
  6. Serve warm.

Notes

No Quinoa? No Problem!

Replace your quinoa with whatever protein you have on hand – beans, lentils, chicken, turkey, and even salmon.
