Pretty much a staple for breakfast, snack or dessert.
Ingredients

- 4 apples (I love granny smith!)
- 1/4 cup raw, unsalted mixed nuts
- 1 Tbsp pure maple syrup
- 1 Tbsp cold-pressed, extra virgin coconut oil
Instructions
- Preheat oven to 350F. Core apples, but don’t pierce through the bottom. Place in an oven-safe dish and set aside.
- In a small pot, on low heat, melt coconut oil and syrup. Combine with mixed nuts.
- Stuff each apple with 1 Tbsp nuts mixture.
- Place 1/2″ water in bottom of the pan. Bake for 25-30 minutes, or until apples are soft.
- Drizzle with a little extra pure maple syrup before serving.
