Baked Egg Stuffed Sweet Potato

Description

This filling breakfast is loaded with fibre, protein, and healthy fats to keep you energized and focused all morning long.

Ingredients

Scale
  • 1 sweet potato
  • 2 eggs
  • sea salt and pepper, to taste
Optional
  • 1 Tbsp pure maple syrup
  • 1 Tbsp kale, finely chopped
  • 2 grape tomatoes, sliced in half

Instructions

  1. Preheat your oven to 425F.
  2. Slice sweet potato in half and drizzle with maple syrup.
  3. Place on a baking sheet with a silicone mat and bake for 1 hour.
  4. Remove from oven and turn heat down to 375F.
  5. Use a fork to mash the sweet potato, making a groove for the egg in the centre.
  6. Crack an egg in each half.
  7. Top with sliced tomatoes, chopped kale, and a sprinkle of sea salt and pepper.
  8. Bake for 14-16 minutes.
