Description

If you love banana bread, then you’ll love this baked oatmeal. It’s a quick + simple one-dish breakfast that’s filling and versatile. Make it ahead and enjoy it warm or cold throughout the week!


Ingredients

Scale
  • 4 bananas
  • 2 cups old-fashioned oatmeal
  • 2 cups oat milk (or milk of choice)
  • 1 egg
  • 1/2 tablespoon cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 400F.
  2. Spray an 8×8 glass dish with coconut oil. Add the bananas and mash well.
  3. Add the oatmeal, milk, egg, cinnamon, vanilla, baking powder, and sea salt. Mix well.
  4. Bake for 40 minutes. Serve immediately or refrigerate for later.

Notes

Serving Tip

Top with Greek yogurt, sliced banana, a drizzle of peanut butter, or melted dark chocolate.

Make it Vegan

Use flax eggs and top with coconut yogurt.

Ingredient Tip

If you have an egg allergy, replace the egg with a flax egg.
