Ingredients

Blackened Lime Salmon

  • 4 4oz Wild Alaskan Salmon Fillets
  • 2 limes, juice and rind
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • pepper, to taste

Mango Avocado Salsa

  • 1 mango, peeled, pit removed, and chopped
  • 1 avocado, peeled, pit removed, and chopped
  • 1/2 red onion, chopped
  • 1 pepper, cored, seeded, and chopped
  • 1 lime, juice and rind
  • 1/2 cup cilantro, chopped

Instructions

  1. Preheat your BBQ to 450F.
  2. In a small bowl, combine lime juice, grated rind, and spices.
  3. Place salmon on tinfoil. Divide and spread spice mixture over fillets.
  4. Place on the BBQ and cook 12-15 minutes, or until cooked through.
  5. Meanwhile, in a medium sized bowl, combine chopped mango, avocado, onion, pepper, lime juice, grated lime rind, and cilantro.
  6. Place salmon on plates and evenly divide salsa over top of the salmon fillets.
