BLT Salad

Description

A light and refreshing summer salad that whips up in minutes!

Ingredients

Scale
Salad
  • 1 head of romaine lettuce
  • 8 slices low-sodium turkey bacon
  • 2 cups grape tomatoes, halved
  • 1 avocado, sliced
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp mustard
  • juice from 1 lemon
  • pinch of sea salt

Instructions

  1. Cook bacon, stovetop on medium heat, until slightly crispy then cut into small pieces.
  2. Meanwhile, combine ingredients for the dressing together and set aside. Wash and tear lettuce into bite-size pieces.
  3. Toss lettuce with dressing. Add bacon, tomatoes and avocado and toss gently.
