A flavourful Mexican dish that’s totally family-approved.
Ingredients
Scale
- 2 cups brown rice
- 4 cups water
- 2 cups spinach, chopped
- 1 cup black beans, drained and rinsed
- 1 cup red peppers, chopped
- 1 cup corn
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- 1/2 cup salsa
- chipotle yogurt dressing (see below)
Chipotle Yogurt Dressing
- 1/2 cup plain Greek yogurt
- 1 Tbsp Mrs. Dash southwest chipotle seasoning
- juice from 1/2 lemon
Instructions
- Place brown rice and water in a rice cooker and turn on.
- Meanwhile, chop the spinach, peppers, cilantro, and avocado. Drain and rinse the black beans. In a small bowl, prepare the chipotle yogurt dressing.
- Once the rice is ready, combine the brown rice, spinach, beans, peppers, corn, cilantro, and avocado in a large bowl.
- Divide mixture into bowls and top with salsa and chipotle dressing (optional).
Notes
Make it Vegan
Use a non-dairy yogurt, like coconut yogurt. Or, skip the dressing altogether.
