Description

A flavourful Mexican dish that’s totally family-approved.

Ingredients

Scale
  • 2 cups brown rice
  • 4 cups water
  • 2 cups spinach, chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup red peppers, chopped
  • 1 cup corn
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1/2 cup salsa
  • chipotle yogurt dressing (see below)
Chipotle Yogurt Dressing
  • 1/2 cup plain Greek yogurt
  • 1 Tbsp Mrs. Dash southwest chipotle seasoning
  • juice from 1/2 lemon

Instructions

  1. Place brown rice and water in a rice cooker and turn on.
  2. Meanwhile, chop the spinach, peppers, cilantro, and avocado. Drain and rinse the black beans. In a small bowl, prepare the chipotle yogurt dressing.
  3. Once the rice is ready, combine the brown rice, spinach, beans, peppers, corn, cilantro, and avocado in a large bowl.
  4. Divide mixture into bowls and top with salsa and chipotle dressing (optional).

Notes

Make it Vegan

Use a non-dairy yogurt, like coconut yogurt. Or, skip the dressing altogether.
