Chicken Caesar Salad

Description

It tastes just like a traditional Caesar salad … even the pickiest eaters will fall in love!

Ingredients

Scale
Salad
  • 2 boneless, skinless chicken breast
  • 8 cups kale, washed and cut into strips
  • 4 Tbsp unsalted, dry-roasted pumpkin seeds
Caesar Dressing
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated parmesan cheese
  • 2 Tbsp white wine vinegar
  • 2 Tbsp dijon mustard
  • 1 Tbsp freshly squeezed lemon juice
  • 2 garlic cloves, crushed

Instructions

  1. Preheat your pan on medium-high heat. Add a little olive oil and your chicken breasts.
  2. Cook for 7-8 minutes, flip and cook another 7-8 minutes or until cooked through.
  3. While the chicken is cooking, make caesar dressing.
  4. Pour dressing over kale and massage dressing, by hand, into kale.
  5. Mix in the pumpkin seeds.
  6. Once chicken is cooked, cut into thin strips and add to your salad. Can be served warm or cold.
