Carrot Zucchini Breakfast Cookies

Description

A cookie that’s totally acceptable to have for breakfast.

Ingredients

Scale
  • 1 banana, mashed
  • 2 eggs
  • 1 cup old-fashioned oats
  • 1 cup carrots, grated
  • 1 cup zucchini, grated
  • 1 Tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • pinch of ginger
  • liquid stevia, to taste (optional)

Instructions

  1. Preheat your oven to 375F.
  2. Combine all of the ingredients together in a bowl.
  3. Spray a cookie sheet with extra virgin coconut oil. Scoop mixture into 8 large cookies.
  4. Bake for 10-15 minutes and let cool.

Notes

Make into half size cookies to use as a snack or pre- or post-workout snack.

Make it Vegan

Replace the eggs with flax eggs one for one.
