Description

Dense, chocolaty, and totally versatile – the perfect healthy “treat”!


Ingredients

Scale
  • 1/2 cup extra virgin coconut oil, melted
  • 1/2 cup raw honey
  • 1/4 cup unsweetened apple sauce
  • 2 eggs
  • 1 tsp pure peppermint extract (or any of your favourites!
  • 1/2 cup coconut, spelt, or whole grain flour
  • 1/3 cup unsweetened cocao powder – not cocoa!
  • 1/2 tsp baking powder
  • 1/2 tsp stevia, optional, if you want it sweeter
  • 1/3 cup dark chocolate chips (70% cocao or more)

Instructions

  1. Preheat your oven to 350F.
  2. In a large bowl combine the wet ingredients. In a small bowl mix together the dry ingredients.
  3. Slowly add the dry ingredients to the wet ingrednets and mix well – do not over mix!
  4. Lightly grease a 9×9 pan and pour the batter inside.
  5. Bake for 25 minutes.
  6. Let cool before serving!

Notes

Freezer Friendly

  • Once the brownies have cooled, cut into 12 slices and wrap individually and place in the freezer. Pull out of the freezer a couple of hours before needed so they can thaw.

Make it Vegan

Swap honey for pure maple syrup. Use flax eggs and vegan chocolate.
