Description
A light and refreshing Spring salad – perfect for lunch or dinner and super versatile!
Ingredients
Scale
For the salad:
- 8 Radishes
- 4 Carrot
- 2 Roma Tomato
- 1 Yellow Pepper
- 1 Avocado
- 1 Cup Baby Kale
- 1/2 Cup Peas
- 1/2 Cucumber
For the dressing:
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Fresh Lime Juice
- 1 Tbsp fresh dill
Instructions
- Wash all of the vegetables and peel your carrots.
- Thinly slice your radishes, carrots, peppers, avocado, and cucumber. Dice your tomatoes.
- In a large bowl, combine all of your sliced vegetables. Add in your peas and kale.
- In a small bowl, whisk together your dressing and pour over your salad.
- Mix together well and then serve.

Optional
Add in your favourite protein to make it a complete meal! Chickpeas, quinoa, black beans, grilled chicken, flaked salmon … you name it and it’s the perfect topping.
