Chopped Vegetable Salad with Dill Lime Dressing

Description

A light and refreshing Spring salad – perfect for lunch or dinner and super versatile!

Ingredients

Scale
For the salad:
  • 8 Radishes
  • 4 Carrot
  • 2 Roma Tomato
  • 1 Yellow Pepper
  • 1 Avocado
  • 1 Cup Baby Kale
  • 1/2 Cup Peas
  • 1/2 Cucumber
For the dressing:
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Fresh Lime Juice
  • 1 Tbsp fresh dill

Instructions

  1. Wash all of the vegetables and peel your carrots.
  2. Thinly slice your radishes, carrots, peppers, avocado, and cucumber. Dice your tomatoes.
  3. In a large bowl, combine all of your sliced vegetables. Add in your peas and kale.
  4. In a small bowl, whisk together your dressing and pour over your salad.
  5. Mix together well and then serve.

Notes

Optional

Add in your favourite protein to make it a complete meal! Chickpeas, quinoa, black beans, grilled chicken, flaked salmon … you name it and it’s the perfect topping.
