Description

A well-loved Christmas cookie … except this one is healthy!


Ingredients

Scale

Cookie

  • 1 1/2 cup whole grain or spelt flour
  • 3/4 cup chopped unsalted pecans
  • 6oz dark chocolate (70% cocao or more)
  • 3/4 cup coconut oil, melted
  • pinch of sea salt
  • 1 cup RIsse’s powdered sugar* (below)
  • 3/4 tsp peppermint extract
  • 2 tsp cold water

Risse’s Powdered Sugar

  • In a food processor, combine 1 cup of arrowroot powder and
  • 1/2–1 tsp stevia.

Instructions

  1. Preheat oven to 350F. Combine flour, pecans and dark chocolate in a small bowl.
  2. Melt coconut oil and then add salt and 1/2 cup icing sugar, extract and water.
  3. Gradually add flour mixture to coconut mixture until well combined. (it should still be crumbly)
  4. Form dough into 3/4″ balls and place on non-stick cookie sheet.
  5. Bake for 18 minutes.
  6. While cookies are still warm, roll in 1/2 cup powdered sugar to coat. Cool on rack.
