A well-loved Christmas cookie … except this one is healthy!

- 1 1/2 cup whole grain or spelt flour
- 3/4 cup chopped unsalted pecans
- 6oz dark chocolate (70% cocao or more)
- 3/4 cup coconut oil, melted
- pinch of sea salt
- 1 cup RIsse’s powdered sugar* (below)
- 3/4 tsp peppermint extract
- 2 tsp cold water
Risse’s Powdered Sugar
- In a food processor, combine 1 cup of arrowroot powder and
- 1/2–1 tsp stevia.
Instructions
- Preheat oven to 350F. Combine flour, pecans and dark chocolate in a small bowl.
- Melt coconut oil and then add salt and 1/2 cup icing sugar, extract and water.
- Gradually add flour mixture to coconut mixture until well combined. (it should still be crumbly)
- Form dough into 3/4″ balls and place on non-stick cookie sheet.
- Bake for 18 minutes.
- While cookies are still warm, roll in 1/2 cup powdered sugar to coat. Cool on rack.
