Maple Pecan Cinnamon Rolls

Description
Not your average cinnamon roll … but, this healthy version is the next best thing! Full of maple sweetness and pecan crunch – you’ll have a hard time stopping at one!
Ingredients

For the dough (see below for a more traditional dough):
- 3 cups almond flour
- 1/4 cup unsweetened almond milk
- 2 Tbsp pure maple syrup
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 egg
For the filling:
- 1/2 cup pecans
- 1/4 cup pure maple syrup
- 1–2 Tbsp ground cinnamon
For the icing:
- 1/2 cup arrowroot powder
- 1 tsp powdered stevia
- 3 Tbsp unsweetened almond milk (or more for thinning)
Instructions
- Combine the ingredients for the dough.
- Cover and place in the freezer for 10 minutes.
- In a food processor, place the filling ingredients and pulse until pecans are chopped.
- On a silicone mat, roll out the dough until thin. Spread filling evenly over dough. Roll into a log and place back in the freezer for 10 minutes.
- Preheat the oven to 350F.
- Cut into 6 slices, place in a pie plate and bake for 20 minutes.
- Remove from oven and let cool slightly.
- Combine the ingredients for the icing and drizzle over cinnamon rolls.
Notes
Spelt Dough
- Prefer a more traditional dough? Make a half batch of my Simple Homemade Bread (sub the honey for maple syrup!) and double the filling and glaze.
- Roll out, spread the filling, and roll into a log. Slice into 12 rolls.
- Place cinnamon rolls in a glass dish (so they’re touching) and bake for 30-35 minutes.
