Description
Soft, chewy, and sweet … just like a cookie (except it’s for breakfast!).
Ingredients

- 1 cup cooked quinoa
- 1 cup oats
- 1/2 cup oat bran
- 1/2 cup unsweetened coconut
- 1/3 cup coconut sugar
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla
- 2 cups raspberries
Instructions
- Preheat your oven to 350F.
- Combine all of the ingredients, except the raspberries, into a medium bowl.
- Add raspberries and mix gently.
- Spray cold-pressed, extra virgin coconut oil over an 8 x 8 dish.
- Bake for 30 minutes.
- Let cool, cut, and place in an airtight container.
Notes
Make it Vegan
Replace the eggs with flax eggs one for one.
