Coconut Raspberry Breakfast Bars

Description

Soft, chewy, and sweet … just like a cookie (except it’s for breakfast!).


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 cup oats
  • 1/2 cup oat bran
  • 1/2 cup unsweetened coconut
  • 1/3 cup coconut sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 2 cups raspberries

Instructions

  1. Preheat your oven to 350F.
  2. Combine all of the ingredients, except the raspberries, into a medium bowl.
  3. Add raspberries and mix gently.
  4. Spray cold-pressed, extra virgin coconut oil over an 8 x 8 dish.
  5. Bake for 30 minutes.
  6. Let cool, cut, and place in an airtight container.

Notes

Make it Vegan

Replace the eggs with flax eggs one for one.
