No-Bake Cranberry Cacao Bites

Description

A quick snack that tastes delicious, is low-allergen, and easy on the gut! (Gluten-free, dairy-free, nut-free, egg-free)


Ingredients

Scale
  • 1214 dates, pits removed
  • 1/2 cup sunflower seed butter
  • 4 Tbsp organic cacao, unsweetened
  • 2 tsp pure vanilla extract
  • 1/2 cup dried unsweetened cranberries

Instructions

  1. Place dates in a food processor and pulse for 20-30 seconds.
  2. Add the butter, cacao, and vanilla and pulse until well combined.
  3. Add in the cranberries and pulse for 10-15 seconds, or until they are mixed in.
  4. Roll into 12 even shaped balls.
  5. Store in an airtight container.

Notes

Easy Swaps
  • Dried cranberries for any dried fruit
  • Cacao for unsweetened shredded coconut
  • Sunflower seed butter for whatever nut butter you have on hand. Just remember to keep it nut-free for schools!
