Cranberry Walnut Baked Oatmeal

Description

Warm, gooey, and full of the flavours of Christmas – this breakfast will easily become a staple throughout the holiday season. It’s quick to assemble, one-pot, and adaptable for the slow-cooker.


Ingredients

Scale
  • 1 cup unsweetened oat milk
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • Pinch of cloves
  • 1 cup old-fashioned rolled oats
  • ½ cup frozen cranberries
  • ½ cup walnuts, coarsely chopped

Instructions

  1. Preheat the oven to 350F and grease an 8×8 glass dish with extra-virgin coconut oil.
  2. In your dish, whisk together the oat milk, syrup, vanilla, cinnamon, ginger, nutmeg, and cloves.
  3. Add in the oats, cranberries, and walnuts. Stir to combine.
  4. Bake for 30 minutes. Serve warm or cold.

  • You can top this with yogurt, coconut whip, or a drizzle of maple syrup.
