Cucumber Sliders

Description
A simple and nutritious appetizer or snack.
Ingredients
Scale
- 3 Large cucumbers
- Toppings –
- Hummus
- Red pepper
- Greek yogurt
- Fresh mint leaves
- Guacamole
- Grape tomatoes
Instructions
- Wash and slice your cucumbers into 1/2 inch rounds.
- Use a small spoon to scoop out the seeds, leaving some cucumber at the bottom (don’t go all the way through!).
- Use a towel to dab out any excess water.
- Fill the cucumber with a little bit of your favourite topping (see combinations in notes).
- Refrigerate until serving.
Notes
Topping Combinations
- Red pepper hummus with a small piece of red pepper on top.
- Greek yogurt with diced, fresh mint leaves.
- Guacamole with a quarter grape tomato.
Make it Vegan
Use coconut yogurt.
