Ingredients

- 1 loaf of Ezekial bread
- 1 dozen eggs
- 2 Tbsp ground cinnamon
- 15–20 drops liquid stevia
- non-fat Greek yogurt, optional
- sliced fruit, optional
- pure maple syrup
Instructions
- In a large, shallow bowl, whisk eggs and mix in cinnamon and stevia.
- Preheat a large pan on low-med heat and spray with cold pressed, extra-virgin coconut oil.
- Dip bread in egg mixture, coating both sides, and place in pan. Once egg is cooked on first side (2-3 minutes), flip and cook the other side. Continue until egg mixture is all used up!
- Top with yogurt, sliced fruit, and a drizzle of maple syrup.
