An easy to make frittata loaded with nutrient dense foods and creamy goat cheese – the perfect breakfast!
Ingredients
Scale
- 12 eggs
- 1 red pepper
- 1 cup baby kale
- 3 mushrooms
- 1/4 cup organic goat cheese
- Sea salt and pepper, to taste
Instructions
- Preheat your oven to 425F.
- Remove seeds and dice your pepper. Roughly chop your kale, and thinly slice your mushrooms.
- In a medium size bowl, crack your eggs and add in peppers, kale, mushrooms, salt and pepper. Gently mix in goat cheese.
- Spray a pie plate with coconut oil and pour in egg mixture.
- Place in oven and bake for 35 minutes.
