Mushroom, Kale, and Goat Cheese Frittata

Description

An easy to make frittata loaded with nutrient dense foods and creamy goat cheese – the perfect breakfast!

Ingredients

Scale
  • 12 eggs
  • 1 red pepper
  • 1 cup baby kale
  • 3 mushrooms
  • 1/4 cup organic goat cheese
  • Sea salt and pepper, to taste

Instructions

  1. Preheat your oven to 425F.
  2. Remove seeds and dice your pepper. Roughly chop your kale, and thinly slice your mushrooms.
  3. In a medium size bowl, crack your eggs and add in peppers, kale, mushrooms, salt and pepper. Gently mix in goat cheese.
  4. Spray a pie plate with coconut oil and pour in egg mixture.
  5. Place in oven and bake for 35 minutes.
