Ingredients

Scale
  • 12 eggs
  • 1/2 cup unsweetened almond milk
  • 1 cup spinach
  • 1 tomato, thinly sliced
  • 1/2 zucchini, thinly sliced
  • ground pepper, to taste

Instructions

  1. Preheat your oven to 375F and spray a pie dish with extra virgin coconut oil.
  2. Whisk eggs, almond milk and spinach together and poor in the pie dish.
  3. Top with tomato and zucchini and sprinkle with pepper.
  4. Place in the oven and bake for 40-45 minutes.
