Description

Deep with molasses and spiced just perfectly … it’s Christmas in a cookie.

Ingredients

Scale
  • 2 Tbsp cold-pressed, extra virgin coconut oil
  • 1/4 cup organic coconut sugar
  • 3 Tbsp blackstrap molasses
  • 1 egg
  • 1 cup whole-grain flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp baking powder
  • ¼ tsp cloves

Instructions

  1. Preheat your oven to 325F and spray a cookie sheet with coconut oil.
  2. Blend oil, sugar, molasses and egg together in a medium bowl.
  3. In a small bowl mix flour, cinnamon, ginger, cloves and baking powder. Add to wet ingredients and mix.
  4. Roll into 12 balls and roll in a little extra coconut sugar (optional).
  5. Place on cookie sheet and bake at for 18 min, or until edges begin to brown.

Notes

Make it Vegan

Use a flax egg in place of the egg.
