Description

Who needs traditional when you can have sweet and healthy?

Ingredients

Scale
For the cookies:
  • 1/4 cup organic grass-fed butter
  • 1/4 cup cold-pressed, extra virgin coconut oil
  • ½ tsp pure vanilla extract
  • 1 cup whole-grain spelt flour
  • ¼ cup organic coconut sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
For the icing:
  • 1/2 cup arrowroot powder
  • 1 tsp powdered stevia
  • 3 Tbsp light coconut milk

Instructions

  1. In a medium bowl, cream butter, oil and vanilla. Add in flour, baking powder, salt and coconut sugar. Add in the egg and mix until combined.
  2. Roll into a ball and place in a ziplock bag and freeze for 15-20 minutes.
  3. Preheat oven to 325F. Roll dough out with a roller, until ¼” thick and cut into shapes.
  4. Bake for 10-15 min. Mix icing together & let cookies cool before icing.

Notes

Store in the fridge in an airtight container.
