Kale and Sweet Potato Frittata

Description

A simple dish bursting with flavour and totally appropriate for any meal of the day.


Ingredients

Scale
  • 12 eggs
  • 1 roasted sweet potato, mashed
  • 2 cups kale, stems removed and chopped into bite-size pieces
  • 1 cups cherry tomatoes, halved
  • 12 sprigs fresh rosemary, removed from stem
  • pepper, to taste

Instructions

  1. Preheat the oven to 375F and spray an oven-safe dish with cold-pressed extra virgin olive oil.
  2. In the dish – beat the eggs, add the sweet potato and mix well. Add the rest of the ingredients, folding gently until coated with egg mixture.
  3. Bake for 40 minutes or until egg is cooked through.
