Description

Not a fan of potatoes? Use yams or sweet potato instead.


Ingredients

Scale
  • 4 russet potatoes
  • toppings: (optional)
  • greek yogurt, non-fat and plain
  • salsa
  • turkey bacon, diced
  • carrots, shredded
  • green onion, diced
  • black beans, drained and rinsed
  • chicken, slow-cooked and shredded
  • avocado, diced
  • yellow peppers, diced
  • brussels sprouts, shredded
  • tomatoes, diced
  • onions, thinly sliced and cooked

Instructions

  1. Preheat your oven to 425F.
  2. Wash your potatoes and slice them in half, lengthwise. Place them on a cookie sheet and bake for 30 minutes, or until soft.
  3. Add toppings of choice and serve. Add a side salad for an extra boost of nutrients.
