A perfectly sweet and festive Valentine’s soup.
Ingredients

- 4–6 beets, peeled and chopped
- 1/2 head cauliflower, chopped
- 1 sweet onion, peeled and chopped
- 2 celery stalks
- 4C low-sodium veggie broth
Instructions
- Add all the ingredients into a large pot and bring to a boil.
- Once it begins to boil, turn it down to a simmer and let sit for 1 hour.
- Use an immersion blender (or pour into your blender) and blend until smooth.
Notes
- You can also place all of the ingredients in the slow-cooker and let simmer while you’re at work. Blend it before serving.
