Description

A perfectly sweet and festive Valentine’s soup.


Ingredients

Scale
  • 46 beets, peeled and chopped
  • 1/2 head cauliflower, chopped
  • 1 sweet onion, peeled and chopped
  • 2 celery stalks
  • 4C low-sodium veggie broth

Instructions

  1. Add all the ingredients into a large pot and bring to a boil.
  2. Once it begins to boil, turn it down to a simmer and let sit for 1 hour.
  3. Use an immersion blender (or pour into your blender) and blend until smooth.

Notes

  • You can also place all of the ingredients in the slow-cooker and let simmer while you’re at work. Blend it before serving.
