Mango-Arugula Salad with Avocado Lime Dressing

Ingredients

Scale
  • 4 cups arugula
  • 1 mango, chopped
  • 1 yellow pepper, coarsely chopped
  • 1 tomato, coarsely chopped
  • 1/2 red onion, thinly sliced
  • 1/21 cup fresh basil, finely diced and divided
  • 1 cup cooked quinoa
  • 1/41/2 cup goat cheese, crumbled
  • 1 avocado
  • 2 limes
  • Pinch of sea salt

Instructions

  1. In a large bowl, combine the arugula, mango, peppers, tomatoes, onion, half of the basil, quinoa, and goat cheese.
  2. In a high-speed blender combine the lime juice, avocado, the remaining basil, and sea salt. Blend on high for 10-15 seconds, or until smooth.
  3. Pour the dressing over the salad and gently mix to combine.

Notes

Dairy-Free Variation

Omit the goat-cheese to make it dairy-free.
