Ingredients

Scale
  • 2 cups whole-grain spelt flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 mangos, peeled and pit removed
  • 2 limes, zest and juice
  • 1/4 cup raw honey
  • 1/4 cup extra virgin coconut oil
  • 1 egg

Instructions

  1. Preheat your oven to 350F and spray a muffin tin with coconut oil.
  2. In a medium bowl, combine flour, baking soda, and baking powder.
  3. In a food processor or blender, combine one mango, juice and zest from limes, honey, oil, and eggs.
  4. Add wet ingredients to dry ingredients.
  5. Chop second mango into small pieces and fold into batter.
  6. Divide into 12 muffin cups and bake for 25 minutes.

Notes

Make it vegan

Swap the honey for pure maple syrup and use a flax egg.
