Maple Pecan Cookies

Description

Full of nutty flavour with a hint of maple – it’s the perfect not-too-sweet treat to satisfy any craving.

Ingredients

Scale
  • 2 cups almond flour
  • 1/2 cup arrowroot powder
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 Tbsp cinnamon
  • 1 tsp sea salt
  • 1 cup chopped pecans
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup almond butter
  • 2 eggs
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350 and add a silicone mat or parchment paper to your cookie sheet.
  2. In a large bowl, combine dry ingredients.
  3. In a medium pot, combine syrup, oil, almond butter, and vanilla. Place on low heat and cook until oil is melted. Do not overheat!
  4. Let cool 2 minutes, add eggs and mix well.
  5. Add wet to dry and fold until combined.
  6. Spoon onto your cookie sheet and bake for 12 minutes.

Notes

Make it Vegan

Use flax eggs.
