Oatmeal Chocolate Chip Cookies

Description

Chewy, gooey, chocolatey goodness. Need I say more?


Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 banana, mashed
  • ¼ cup extra-virgin coconut oil
  • ¼ cup pure maple syrup
  • 2 teaspoon pure vanilla extract
  • ¼ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350F and line a cookie sheet with a silicone mat or parchment paper.
  2. In your food processor, pulse the oats, baking powder, and cinnamon until the oats are half ground. 
  3. In a medium bowl, combine the banana, oil, syrup, and vanilla.
  4. Add the oats to the banana mixture and mix well.
  5. Add the chocolate chips and stir to combine.
  6. Scoop onto a cookie sheet and gently flatten. Bake for 10 minutes.
  7. Let cool before serving.
