Oatmeal Chocolate Chip Cookies

Ingredients

- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 banana, mashed
- ¼ cup extra-virgin coconut oil
- ¼ cup pure maple syrup
- 2 teaspoon pure vanilla extract
- ¼ cup dark chocolate chips
Instructions
- Preheat the oven to 350F and line a cookie sheet with a silicone mat or parchment paper.
- In your food processor, pulse the oats, baking powder, and cinnamon until the oats are half ground.
- In a medium bowl, combine the banana, oil, syrup, and vanilla.
- Add the oats to the banana mixture and mix well.
- Add the chocolate chips and stir to combine.
- Scoop onto a cookie sheet and gently flatten. Bake for 10 minutes.
- Let cool before serving.
