Ingredients

- 2 cups brussel sprouts, stems removed and halved
- 1/2 red onion, cut into large pieces
- 2 large carrots, peeled and cut into large pieces
- 4 garlic cloves, sliced
- 2 Tbsp extra virgin olive oil
- 4 boneless, skinless chicken breasts
- 1 Tbsp dried basil
- 1/2 Tbsp rosemary
- 1/2 Tbsp thyme
- 2 tsp paprika
- sea salt and pepper
Instructions
- Preheat your oven to 425F.
- Toss in all the vegetables, drizzle with olive oil and sprinkle with a little sea salt and pepper. Toss to coat.
- Add chicken.
- Combine herbs in a small dish and coat chicken.
- Bake for 35 minutes, or until cooked through.
