One-Pan Salmon and Asparagus

Description

A simple mood-boosting one pan meal that’s ready in 30 minutes!

Ingredients

Scale
  • 4 3oz wild-caught salmon fillets
  • 2 Tbsp olive oil
  • 2 lemons
  • 4 garlic cloves
  • 1 tsp raw honey
  • Sea salt and pepper, to taste
  • 1 lb of asparagus

Instructions

  1. Preheat oven to 400F.
  2. Line a baking sheet with a silicone mat and place the salmon skin side down in the centre.
  3. In a small bowl, combine 1 Tbsp of oil, zest and juice from 1 lemon, 2 garlic cloves (minced), honey, and salt and pepper. Slice the other lemon.
  4. Spread the sauce over the salmon and top with lemon slices. Place in the oven and bake for 10 minutes.
  5. Meanwhile, trim your asparagus and toss with 1 Tbsp of olive oil, 2 garlic cloves (minced), sea salt and pepper.
  6. When salmon is done, remove from oven and add asparagus to the sides. Place back in the oven and bake for another 15 minutes.
