Description

Peaches are a summer gem, and this crisp definitely does them justice. It’s the perfect balance of sweet and crunchy, while making a delicious snack or dessert. Prep time is fast, just leave a little time for it to cook!


Ingredients

Scale
  • 4 peaches
  • 1/4 cup coconut oil, melted
  • 2 tablespoons pure maple syrup
  • 2 cups rolled oats
  • 1/2 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350F. Spray a medium oven-safe dish with coconut oil.
  2. Pit the peaches and thinly slice. Spread evenly in the dish.
  3. In a medium bowl, combine the coconut oil, maple syrup, oats, and cinnamon. Spread over top of the peaches.
  4. Bake for 40 minutes. Let cool for 10 minutes before serving.

Variation Tip

This recipe works great with nectarines, blueberries, and even rhubarb.
