Quinoa Pizza Bites

Description

It will soon be your go-to for picnics … seriously!

Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 egg
  • 1 cup onions, finely chopped
  • 1/2 cup spinach, finely chopped
  • 1/4–1/2 cup cheese, grated
  • 2 garlic cloves
  • 1 tsp oregano
  • 1/2 tsp basil
  • pepper, to taste
  • 1/4 cup marinara sauce, per person

Instructions

  1. Preheat oven to 350F and spray 12 cup muffin tin with extra virgin olive oil.
  2. Combine all of the ingredients in a large bowl.
  3. Divide mixture among muffin tins.
  4. Bake for 20 minutes.
  5. Serve with a side of marinara sauce to dip.
