Portobello Mushroom Pizza

Description

A simple and delicious lunchtime pizza recipe that will increase energy, focus, and digestion. Sweet deal, eh?


Ingredients

Scale
  • 4 portobello mushrooms
  • 4 cups of vegetables, chopped
  • 1/2 cup organic, low-sodium tomato paste
  • 1/2 cup cheese of choice (nutritional yeast,
  • daiya, etc)
  • 1 Tbsp dried oregano

Instructions

  1. Preheat your oven to 375F.
  2. Cut the stem off the portobello mushrooms and place on a cookie sheet.
  3. Spread 2 Tbsp of tomato paste on each mushroom and sprinkle with 1/4 Tbsp of oregano.
  4. Top each with 1 cup of vegetables and 2 Tbsp of cheese.
  5. Bake for 5-8 minutes or until cheese is melted.
