Pumpkin is a classic fall addition to, well … everything. This recipe takes your breakfast to a whole new level with your favourite pumpkin flavors in a warm and comforting meal.

- 1 cup pure pumpkin puree
- 1 cup oat milk
- 1 (400 mL) can coconut milk
- 1 tablespoon pumpkin pie spice
- ¼ cup pure maple syrup
- ¼ cup chia seeds
- ½ tablespoon pure vanilla extract
- Pinch sea salt
- 2½ cups old-fashioned oats
Instructions
- Preheat the oven to 375F.
- In a greased 9 x 13 glass baking dish, whisk together the pumpkin, oat milk, coconut milk, spice, syrup, chia seeds, vanilla, and sea salt.
- Stir in the oats.
- Bake for 30 minutes.
- Serve warm and garnish with some crushed walnuts, Greek yogurt, or fruit.
