Description
A fall inspired dessert to improve anxiety and warm the soul.
Ingredients
Scale
- 2 cups oat flour
- 2 Tbsp pumpkin spice
- 1 1/2 tsp baking soda
- Pinch of sea salt
- 1 1/2 cups pumpkin puree
- 2 eggs
- 1/2 cup pure maple syrup
- 2 tsp pure vanilla extract
- 1 organic dark chocolate bar (80% or more cacao)
Instructions
- Preheat your oven to 375F and spray a 9×13 glass dish with coconut oil.
- In a small bowl combine your oat flour, pumpkin spice, baking soda, and salt.
- In a medium bowl combine the pumpkin, eggs, maple syrup, and vanilla.
- With the chocolate bar in its wrapper, use a knife handle to break the chocolate into chunks. Stir into the wet mixture.
- Mix the dry into the wet mixture until well combined.
- Pour into the dish and bake for 35 minutes, or until cooked through.
- Let cool and slice into 16 pieces.
Notes
No Oat Flour
If you have oats, you can make your own oat flour by pulsing oats in your food processor until you’ve reached the desired consistency. You can also sub in whatever flour you have on hand!
Gluten-Free
Use gluten-free oats or a gluten-free flour.
Make it Vegan
Use flax eggs and vegan chocolate.
