No-Bake Pumpkin Spice Bites

Description

A quick no-bake breakfast or snack – no food processor required!


Ingredients

Scale
  • 1 cup coconut flour
  • 1/2 cup pure pumpkin puree
  • 1/2 cup sunflower seed butter
  • 1/4 cup pure maple syrup
  • 2 Tbsp almond milk, unsweetened
  • 2 Tbsp pumpkin pie spice
  • 2 tsp pure vanilla extract
  • Optional: stevia, if you like it sweeter

Instructions

  1. In a medium bowl, combine all of the ingredients until well mixed.
  2. Roll into 20 balls.
  3. Store in an airtight container.

Notes

Sweetener

  • I keep sweeteners low for many reasons – to balance nutrients, to prevent the development of a “sweet tooth”, and to watch calories.
  • However, if you like it sweeter feel free to add stevia (calorie free), increase the maple syrup, or swap out the sweeteners for dates and use your food processor to combine.
