A quick no-bake breakfast or snack – no food processor required!
Ingredients
Scale
- 1 cup coconut flour
- 1/2 cup pure pumpkin puree
- 1/2 cup sunflower seed butter
- 1/4 cup pure maple syrup
- 2 Tbsp almond milk, unsweetened
- 2 Tbsp pumpkin pie spice
- 2 tsp pure vanilla extract
- Optional: stevia, if you like it sweeter
Instructions
- In a medium bowl, combine all of the ingredients until well mixed.
- Roll into 20 balls.
- Store in an airtight container.
Notes
Sweetener
- I keep sweeteners low for many reasons – to balance nutrients, to prevent the development of a “sweet tooth”, and to watch calories.
- However, if you like it sweeter feel free to add stevia (calorie free), increase the maple syrup, or swap out the sweeteners for dates and use your food processor to combine.
