Pumpkin Chocolate Chip Cookies

Description

A healthy and kid-approved snack

Ingredients

Scale
  • 2 cups whole grain spelt flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 Tbsp pumpkin pie spice
  • pinch sea salt
  • 2 eggs
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup dark chocolate chips (or a little more!)

Instructions

  1. Preheat your oven to 350F.
  2. In a large bowl, combine dry ingredients. In a smaller bowl, mix wet ingredients. Add the wet ingredients to the dry ingredients and mix well.
  3. Line a cookie sheet with parchment paper and scoop dough onto cookie sheet. Use a spoon to flatten the cookie slightly.
  4. Bake for 15 minutes.

Notes

Make it Vegan

Use flax eggs in place of regular eggs, one for one. Use pure maple syrup instead of honey and vegan chocolate chips.
