Crunchy Quinoa Granola Recipe by Nutritionist Sharisse Dalby

You must be thinking I’m crazy for mixing your beloved granola with quinoa, eh?

Well I have a bit of a bone to pick with granola. While I do love it, the store-bought ones are enough to turn your digestive system upside down.

Between the loads of sugar (the average box has over 12g of sugar a serving!), potential for gluten, and other refined and processed ingredients – it’s a nightmare for the gut.

We all love a good quick breakfast in the morning and often we think our bowl of yogurt and granola is the perfect healthy option – but it’s not. The combination of ingredients is enough to give you gas, bloating, constipation, anxiety, breakouts, and much more.

Plus, starting your day out with some good healthy fats and proteins is the best way to ensure a clear mind, healthy gut, and steady energy. Your beloved granola can’t do that!

So instead of filling your family’s bowls with store-bought granola before work and school … how about giving this protein and healthy fat rich granola a whirl?

Description

Start your day off with a good source of protein and healthy fats, while still enjoying the crunchy, salty, sweetness you love from traditional granola.


Ingredients

Scale
  • 1 cup uncooked quinoa, rinsed
  • 2 Tbsp cold-pressed extra virgin coconut oil
  • 1/4 tsp cinnamon
  • 1 Tbsp ground flaxseed

Instructions

  1. Preheat your oven to 350F.
  2. In a small pot, melt the coconut oil. Mix the oil, cinnamon, flaxseed and quinoa together.
  3. Spread over a small baking sheet and bake for 35 minutes, stirring after 15 min, until crunchy and golden.
