Ingredients

Salad

  • 4 cups cooked quinoa
  • 2 cups cherry tomatoes
  • 1/2 cabbage, spiralized
  • 1/2 pineapple, diced
  • 4 carrots, thinly sliced using a peeler
  • 2 green peppers, thinly sliced

Dressing

  • 2 large navel oranges, juiced
  • 1/4 cup cold-pressed, extra virgin olive oil
  • 2 Tbsp white wine vinegar
  • 1 shallot, diced

Instructions

  1. In a small bowl, combine dressing and mix well with quinoa.
  2. Add tomatoes, cabbage, pineapple, carrots and peppers to quinoa and mix gently.
